The Tunnel is the new project by Chef Moreno Cedroni—a research and development laboratory designed to channel the best of technology applied to the culinary arts. The Tunnel, as a metaphor, reaches its peak—its light—in the finished product: an excellence of outcome, the result of human ingenuity and the fundamental principles of nourishment and taste.

 

The Tunnel Project is the natural evolution of a journey that, while initially driven by intuition, has now given way to reflection, knowledge, and awareness—while still recognizing the irreplaceable value of creativity.

 

It begins at the starting point, digging through the darkness, until reaching the moment when, at the end of the tunnel, a finished product emerges—one defined by its nourishing qualities, guided by the logic of pleasure and digestibility, now a cornerstone of the Chef’s culinary philosophy.

 

The Tunnel employs the best available technology to extract ever-improving results from raw ingredients. In the lab, alongside Chef Cedroni, is the constant and invaluable presence of Luca Abbadir, Cedroni’s sous-chef at La Madonnina del Pescatore. Numerous collaborations with universities and research institutes further validate the project’s status as a true space of experimentation.

 

The team involved brings its full expertise to the table every day, with the goal of preserving the integrity of ingredients by using technology without denaturing them—enhancing flavors by simply maximizing the food’s natural properties, creating new textures and sensory experiences, and minimizing waste while respecting the environment.
